Aronia Berry/Rhubarb Sauce

This is a very simple recipe I've made on top of a G3300 Rocket Stove.  You may not have heard of Aronia Berries, but they are really taking off Commercially in the Western Part of Iowa.  I even helped out planting a farm nearby. They taste a bit "blah" raw, but they are really good for you, and probably the berry highest in antioxidants you can grow in the United States.  They really add a deep purple color to whatever you cook with it, or if you blend it into wine.  They are a Native Shrub to the Eastern United States and Canada, but many of the commercial varieties were actually developed in Russia and Eastern Europe.  Apparently Aronia Berry Ice Cream is a very popular flavor in Poland.  My Dad and I like this sauce on vanilla ice cream as well.  My Milk Goat Jolene is also quite fond of every part of the Aronia Bush, and does her best to keep whatever part of the Aronia hedge she can reach through the fence well trimmed.

Aronia Berry/Rhubarb Sauce
- 2 cups Aronia Berries (Fresh or Frozen)

- 4 cups Chopped Rhubarb
- 2 cups sugar


= stir and simmer until you get the desired consistency.  The longer you cook the thicker your sauce will get.  The Rhubarb will pretty much disintegrate after awhile, but the Aronia Berries will never completely break down.

*This is a nice recipe to use with an Envirofit Rocket Stove.  It takes a lot of stirring anyway to keep it from burning or boiling over,  so you can tend the fire and push in your sticks, in between stirring.  I actually double the ingredients of this recipe.
